Paul Lato Wines

Paul Lato was born in Poland and began his wine career as a sommelier in Toronto. The desire to vinify his own wines began to grow even then. To gain experience, he completed internships at Jim Clendenen's Au Bon Climat and Bien Nacido Vineyards. Influenced by this, he specialized in Burgundy and Rhône grape varieties and bottled his first own wines in 2002 with around five hundred cases of Pinot Noir and Syrah.
He received early support from Thomas Keller, for whose French Laundry he also produces his own Modicum bottling.
For his production, he buys grapes from the best vineyards in the Central Valley and selects the best blocks for each vintage. In the cellar, he focuses on cleanliness and minimal intervention.
For Lato, the best wines in the world have the attributes of authenticity, harmony and elegance. His aim is therefore to produce wines that have structure and balance and can also accompany fine cuisine.
