Aniseed, quince, fennel, sage, lime zest and slate grip, this slides along the palate, building to mouthwatering finish. A great white wine that pulls you up short, it was brilliant En Primeur, and is better now. Intense cut grass and steel, just enough tension to kick up a little drama, stretching out over the palate, with plenty of lees stirring over ageing to round out the mid palate. One of the wines of the vintage. September 7 to 13 (unusual in recent years for white harvest to start in September rather than August).

The 2021 Pavilion Blanc du Chateau Margaux is made from vines that are now over 50 years old, with a yield of 18 hectoliters/hectare. About half of the total production was used and the rest was sold in bulk. The wine was aged in 25% new oak and it was bottled in July 2022. It has a pH is 3.05. It sails out of the glass with graceful scents of white peaches, lemon curd, and elderflower, leading to hints of lime zest and sea spray. Medium-bodied, the palate delivers impactful citrus and mineral layers, supported by a crisp backbone and a satiny texture, finishing long and chalky. Impressive! With a Diam cork and the new darker bottle, this should age remarkably well.
